Carrot, Sweet Potato & Red Lentil Soup

Everyone experienced once in a while a “bad day” (someone more than once). You know, that day where you just want to go home and forget about everything. To make it worst, you are hungry and you want something comforting. Well, I have a solution for you that doesn’t required much time and effort!

It’s a soup, but it’s a soup that is delicious, nutrients, packed with anti-oxidant, happiness and the color orange make it so inviting!

Carrot, Sweet Potato & Red Lentil Soup

Ingredients
  

for the soup

  • 2 carrots sliced
  • 1 cup red lentils washed
  • 1 sweet potato sliced
  • 1 celery stalk sliced
  • 1 tablespoon olive oil
  • 500 ml water
  • 1 cube vegetable stock

for seasoning

  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch smoked paprika
  • 1 pinch turmeric

for the topping – optional

  • 1 teaspoon black sesame seeds
  • 1 coriander
  • 1 teaspoon olive oil

Instructions
 

  • Cut the vegetables into chunks. Don’t need to be precise as we will blend the soup later.
  • Heat a pot with the olive oil and add the vegetables plus the lentils and stir for a minute
  • Add the vegetable broth and let the soup simmer for about 20 minutes 
  • Season with salt and pepper and the spices.
  • Blend it with a hand blender until it becomes smooth.
  • Divide into 2 bowls and serve topped with black sesame seed and coriander (or any other herbs you like). Chopped nuts and seeds are also a valid alternative.
