Focaccia

Focaccia is one of Italy’s favorite bread to make at home. It has a crisp outside and soft inside, and is perfect to serve along with dinner, soups or even sliced in half and used for sandwiches.

Some of the recipes you find online require lots of time to rest (some of them even a day) but the one I want to show you today you can make it in less than 2 hours (the resting process is about an hour).

The secret for the crispiness is semolina (or semola), a purified wheat of durum wheat used for making pasta.

Easy Focaccia

This focaccia is super easy to make, you can have fun with the toppings and it is a perfect companion for soups, dinner or to make a perfect sandwich!

Ingredients
  

for the dough

  • 300 g plain flour (I’ve used type 00)
  • 100 g semolina flour
  • 7 g dried yeast
  • 300 ml water room temperature
  • 1 tablespooon extra virgin olive oil
  • 2 teaspoon sea salt

for the toppings (anything you like) – in this case I’ve used:

  • 1 red onion sliced and pickled
  • 2 teaspoon extra virgin olive oil
  • 1 teaspoon rocket sea salt

Instructions
 

let’s make the dough

  • 1. Pour the dried yeast inside the water and let it rest for a few minutes
    2. Combine the 2 flours into a bowl, along with the salt.
    3. Pour the water/yeast gently into the bowl and start mixing with a spoon really fast.
    4. the dough should become very gluey and wet but also you should be able to work it out. 
    5. pour the dough into a surface and start working it with you end for 10 minutes. 
    6. now place the dough back to the bowl, cover it with clean film and let it rest for about an hour
  • 1. Place the dough into a tray that we have oiled before and, with your hands, spread the dough evenly into the tray and let it rest again for about 30 minutes.

it’s all about the toppings!

  • 1. Start heating the oven for 200C/392F/Gas6
    2. place the toppings to the dough, then place the tray into the oven and cook for about 20 minutes, until the whole surface becomes golden brown.
  • Congratulations! You just made Focaccia!
